What you need

cucumber

tsp sriracha hot sauce

tbsp rice vinegar

cup cooked jasmine rice

bunch green onion

lb salmon

clove garlic clove

tbsp soy sauce

tsp lime juice

tbsp sesame oil

cup mayo
tbsp liquid honey

cup edamame

pinch salt
Instructions
1 Preheat oven to 400°F. 3 In a bowl, toss the cubed salmon with soy sauce, sesame oil, honey, rice vinegar, sriracha (if using), and garlic. Let it sit while you prep the rice — 5–10 minutes is perfect. 5 Stir rice vinegar and salt into warm rice. Spread the rice evenly into a greased 9×13 baking dish or large oven-safe skillet. 7 Spoon the marinated salmon evenly over the rice. Pour any extra marinade over the top. 9 Bake uncovered for 18–22 minutes, until the salmon is just cooked and flakes easily. 11 Drizzle with spicy mayo and top with cucumber, avocado, edamame, and green onions right before serving.View original recipe
