What you need

tsp garlic powder

fl oz olive oil

packaged no-boil lasagna noodles
yellow summer squash

cup cottage cheese

cup shredded mozzarella

cup parmesan cheese

tsp salt & pepper

red bell pepper

red onion

cup ricotta cheese
lemon zest
egg

cup cherry tomato

cup marinara sauce

zucchini
Instructions
1 Preheat oven to 400°F. 2 Toss veggies with olive oil and seasoning. Roast 15–20 minutes. 3 Mix ricotta, cottage cheese, parmesan, egg, garlic powder, lemon zest, basil, salt and pepper. 4 Grease sheet pan. Layer marinara, noodles, ricotta, veggies, mozzarella. Repeat layers. 5 Top with cheese. Bake 20–25 minutes until bubbly. 6 Broil 2–3 minutes until golden. 7 Finish with fresh basil and olive oil.View original recipe
