fl oz lime juice

tsp ground cumin

tsp smoked paprika

cup plain greek yogurt

cup cotija cheese

tbsp olive oil

cup corn

Instructions
1 Preheat oven to 425°F. 2 Toss diced sweet potatoes with olive oil, chili powder, garlic powder, salt and pepper. Roast 10 minutes. 3 Mix chicken with olive oil, lime juice, honey, chipotle, garlic powder, cumin, paprika, salt and pepper. 4 Push potatoes to one side of the pan and add chicken. Roast another 12–15 minutes until chicken is cooked through. 5 Stir together corn, mayo or Greek yogurt, cotija, lime juice, cilantro and chili powder. 6 Serve chicken and sweet potatoes topped with elote mixture and optional garnishes.View original recipe
