Pesto Burrata Pasta Salad

This elevated pesto burrata pasta salad is the perfect summer side dish for BBQs, potlucks, and entertaining. Made with campanelle pasta, peppery arugula, creamy burrata, lemon, pesto, parmesan, and pistachios, this easy pasta salad is fresh, flavorful, and anything but boring.

What you need

cup basil pesto

tsp red pepper flake
cup parmesan cheese

cup arugula
dash salt & pepper

oz burrata

cup pistachio nuts
Instructions
1 Bring a large pot of salted water to a boil and cook pasta until al dente. Drain and let cool slightly. 2 In a jar or bowl, whisk together olive oil, lemon juice, salt, and pepper. 3 Add pasta to a large bowl with arugula and parmesan cheese. Pour over the lemon dressing and toss well. 4 Transfer to a serving bowl and dollop pesto over the top. Add burrata and gently break it apart slightly. 5 Finish with pistachios, red pepper flakes, extra lemon juice if desired, salt, and pepper. Serve immediately or chilled.View original recipe
