Instructions
1 Preheat oven to 375°F. 2 In a bowl, whisk together eggs, cottage cheese, salt, and pepper. (I like to blend mine with an immersion blender for a fluffier texture.) 3 Line a small baking tray with parchment paper. Pour in the egg mixture, top with sliced jalapeño and cheddar, and bake 16–18 minutes, until set. 4 While the eggs bake, toast the English muffins and cook bacon. 5 Mix the softened cream cheese with Everything But the Bagel seasoning. 6 Once eggs are baked, use a jar lid or cup to cut circles that fit your muffins. 7 Spread cream cheese on each muffin, layer with egg round and bacon. 8 Wrap each sandwich in parchment paper, then store in a large freezer bag for up to 2 months.View original recipe
