1 Preheat your oven to 400°F. 2 Add the cottage cheese, buffalo sauce, hot honey, garlic powder, onion powder, salt, and pepper to a blender. Blend until completely smooth and creamy. This step is key — it turns cottage cheese into a rich, velvety sauce that coats everything evenly. 4 Lightly grease a baking dish. Spread the cauliflower florets or diced potatoes evenly across the bottom of the dish. If you’re using potatoes, make sure they’re diced small so they cook through evenly. 5 Add the raw chicken pieces on top of the vegetables. 6 Pour the blended buffalo cottage cheese sauce evenly over the chicken and veggies.
