What you need
1 tbsp honey
2 tbsp lime juice

2 tbsp fresh cilantro

1 avocado

2 tbsp olive oil

1 cup cherry tomato

4 ears sweet corn

2 tbsp shallot
Instructions
1 Grill corn on medium-high heat for 10 minutes, rotating occasionally, until lightly charred. Let cool, then slice kernels off the cob. 2 In a large bowl, combine grilled corn, tomatoes, shallots, avocado, olive oil, lime juice, honey, Tajín, and cilantro. 3 Toss gently to coat. Add arugula last and toss again just before serving. 4 Taste and add more Tajín or lime juice if desired.View original recipe
