What you need

tsp salt & pepper

cup mayonnaise

tsp honey

boneless chicken breast halves

cup jack cheese

fl oz lime juice

tbsp olive oil

cup fresh cilantro

cup cotija cheese

cup corn

fl oz cooking oil

flour tortilla

cup red onion
salsa

fl oz fresh lime juice
Instructions
1 Preheat oven to 400. 2 Season chicken with tajin, lime, honey, oil, salt and pepper and bake 20–25 minutes, then chop. 3 Mix corn, red onion, cilantro, mayo, cotija, tajin and lime to make elote salsa. 4 Spray sheet pan and layer tortillas. 5 Add cheese, chicken, elote salsa and more cheese. 6 Fold tortillas over, spray with oil and press with another pan. 7 Bake 20 minutes until crispy. 8 Slice and serve.View original recipe
