Chipotle Beef + Avocado Bowls

Bursting with so much flavor- these Chipotle Beef + Avocado Bowls are incredibly simple, yet one of my favorite Meal Prep recipes!

What you need

tsp salt

tsp paprika

tsp cumin

tsp garlic powder

tsp onion powder

tbsp chipotle in adobo

green bell pepper

cup cauliflower rice

cup cooked white rice
lime

avocado

cup dried cilantro

cup red onion
Instructions
0 Over medium high heat, cook down ground meat, add in the seasonings + chipotle peppers 3 When the beef is almost done cooking , push it all to the side and add in the bell peppers, cook until tender and the beef is no longer pink or the turkey/chicken has reached an internal temperature of 165° 1 Slice the Avocados down the middle, leaving the pit in. This will keep them from turning brown. Be careful! The Pit is hard, but with a sharp knife, you can do it! 2 In a large bowl mix together the cooked rice, cauliflower rice + lime juice 4 Assemble each meal prep container with-- 1 cup of the rice mixture- 4 oz of beef-1/2 cup of bell peppers- 1/2 of an avocado- top with cilantro + red onions 5 Store these in the refrigerator for up to 5 days!Enjoy!View original recipe
