tortilla

tbsp taco seasoning

cup shredded cheddar

cup bell pepper

0 In a skillet over medium-high heat, cook the sausage, onions, and peppers until the sausage is browned and cooked through. 1 Preheat the oven to 375°F. 2 In a bowl, whisk together eggs, taco seasoning, and enchilada sauce. 3 Spray 4 round glass meal prep containers (or an 8x8 baking dish) with olive oil. Layer ¼ cup of sausage mixture, 1 tbsp cheese, and a tortilla. Repeat once for two layers. 4 Using a knife, poke 6–8 small holes through the tortillas and sausage. Pour ½ cup of the egg mixture over each container (or evenly over the baking dish). 5 Bake at 375°F for 30 minutes, or until the eggs are set and the tops are slightly golden. 6 Let cool before adding toppings.
