What you need

1 fl oz olive oil cooking spray

1 tsp salt

1 can black beans

2 bunch green onion

1 tbsp seasoning blend

1 cup corn

1 cup greek yogurt

½ cup fresh cilantro

½ tsp ground cumin

1 cup shredded cheese

1 cup fresh spinach

2 cup cooked chicken breast

1 jalapeno

1 tsp ranch
Instructions
1 Make the sauce: Blend Greek yogurt, lime juice, cilantro, jalapeño, ranch seasoning, cumin, and salt until smooth. Set half aside for dipping. 2 Mix the filling: In a large bowl, combine shredded chicken, beans, corn, peppers, onions, spinach, cheese, seasoning, and 1/4. cup of the sauce. Stir well to coat everything evenly. 3 Assemble: Spoon 2–3 tablespoons of the filling into each wrapper. Roll tightly and seal the edges with a dab of water. 4 Air fry: Spray basket with olive oil and place eggrolls in a single layer. Spray lightly on top. Air fry at 375°F for 8–10 minutes, flipping halfway through until golden and crispy. 5 Serve: With the remaining cilantro-lime sauce for dipping.View original recipe
