Start by chopping all of the veggies and chicken
I cook my chicken in the instant pot by seasoning it with salt, pepper, garlic and cooking it on the meat option for 20 minutes (30 if frozen), let it slow release and cool completely before chopping.
Using a Food Processor, shave the brussels sprouts or save your self some time and just buy them shaved. If you don't have a food processor, just try to slice them as thin as possible- think colesalw thin.
You can use any combination of lettuce you like. I just chose brussles sprouts for this because of the added fiber.
If using this salad for meal prep layer each container with 1 cup brussles sprouts, 4oz chicken, 1/2 cup bell peppers. 1/4 cup carrots, 1/4 cup cashews, cilantro, green onions and sliced jalapenos
Citrus Dressing
MIx all of the ingredients in a small bowl or mason jar, stir well and pour into dressing containers
